Ingredients:
3 1/2 cups of flour
1 1/3 cups of brown sugar (packed)
2/3 cup of white sugar
2 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
1 1/2 tsp. cinnamon
1 can (15oz.) pumpkin
1 cup oil
2/3 cup coconut milk
2/3 cup flaked coconut
1 cup chopped walnut
2 eggs
1 tsp. vanilla extract
*Preheat oven to 350 degrees
*Grease and flour two 8x4 loaf pans.
In a small mixing bowl, mix with a fork the flour, white sugar, baking soda, salt, nutmeg and cinnamon.
Set aside.
In a large mixing bowl, mix pumpkin, brown sugar, eggs, oil and vanilla extract.
Blend well.
Add dry ingredients to mixture. Stir with a spoon. Fold in coconuts and walnuts.
Pour into 2 pans.
Bake for about 1hr. 15mins.
